The idea for opening a cafe offering fresh, wholesome brunch items came to Brianna Keefe in 2017 when the young college student was searching for better ways to support her busy, active lifestyle.

A Division I collegiate athlete, Keefe was on the hunt for snacks to maintain energy and stamina throughout a busy academic year filled with rigorous training sessions and a demanding sports schedule. Noticing a need in the local market for freshly prepared gourmet health food, Keefe began to explore the idea of opening a cafe – one with a menu as delicious as it was nutritious.

A year later, with the help of business partner and construction expert Kyle Izett, Keefe opened Toastique Breakfast Cafe in Washington, D.C.’s Wharf District. With a trendy, Instagrammable interior and healthy fare like gourmet toasts and cold-pressed juices, the new cafe quickly gained popularity among locals – and ultimately catapulted Keefe and Izett into a career as franchise founders that has shown no signs of slowing down since.

Fast-Casual, health-focused franchise beginnings

In 2019, after a financially healthy first year at their flagship D.C. restaurant (largely due to word-of-mouth from the company’s loyal clientele), Keefe and Izett opened Toastique’s second location – this time, in nearby Alexandria, Virginia.

Boasting healthful offerings like bowls, all-natural juices, coffee, smoothies, wellness shots, and customizable gourmet toasts prepared in-house and topped with fresh, organic ingredients like smashed avocado, tomato and burrata, peanut butter and fruit, tuna, crab and more, Toastique’s simple, healthy menu proved to be a hit among its new neighbors – prompting Keefe and Izett to consider scaling the brand beyond the East Coast.

To achieve their goal, the partners turned to a proven business model known for its ability to scale consistently: franchising.

Building a legacy

With the help and expertise of the team at The Internicola Law Firm, which specializes exclusively in franchise law and development, Toastique Gourmet Toast and Juice Bar officially launched as a franchise system in 2019.

Since then, the brand’s lower-cost entry into the fast-casual dining space and simple, scalable business model and emphasis on brunch has made it an appealing opportunity for aspiring franchise owners looking to join the growing health food industry while having more time in the evenings to spend with family.

It’s partly because of those benefits that the fledgling brand has grown from its first two cafes in 2019 to over 40 units in 11 states across the country – and counting.
